Egaña Oriza
Seville's most stylish restaurant is within the conservatory of a restored mansion adjacent to the Murillo Gardens. Its reputation stems in large part from a game-heavy menu in a region otherwise devoted to seafood. The restaurant was opened by Basque-born owner/chef José Mari Egaña, who combines his passion for hunting with his flair for cooking. Many of the ingredients have been trapped or shot within Andalusia. The view from the dining room encompasses a garden and a wall that formed part of the fortifications of Muslim Seville. Specialties depend on the season but might include ostrich carpaccio, gazpacho with prawns, steak with foie gras in grape sauce, casserole of wild boar with cherries and raisins, duck quenelles (a dumpling made with fish or meat and bound with eggs) in a potato nest with apple purée, and woodcock flamed in Spanish brandy. The wine list provides an ample supply of hearty Spanish reds. Dessert might feature a chocolate tart slathered with freshly whipped cream.

La Isla
La Isla consists of two large Andalusian dining rooms (thick plaster walls, tile floors, and taurine memorabilia). Always fresh, the seafood is trucked or flown in from either Galicia or Huelva, one of Andalusia's major ports. Menu items include sirloin steak with red peppers and onions or grilled turbot with a marinara sauce. Sole filets Cleopatra comes with shrimp, ham, and fresh mushrooms. The restaurant, a short walk from the cathedral, is in a very old building erected, the owners say, on foundations laid by the ancient Romans.

Marea Grande
This is a nice fish restaurant with a neat ambiance and a comfortable atmosphere. Connoisseurs call this one of the better restaurants in town. The honest Spanish cuisine here is absolutely great. Fish lovers will be in seventh heaven here! Fish dishes in abundance on the menu. The innovative fish dishes are a specialty here. All sorts of guests in this restaurant, but mainly couples and business people. The friendly and enthusiastic service, among other things, creates a pleasant atmosphere. Staff members dress in a professional and neat style.

Taberna del Alabardero
One of Seville's most prestigious restaurants occupies a 19th-century town house 3 blocks from the Seville Cathedral. Famous as the dining choice of nearly every politician and diplomat who visits Seville, it recently hosted the king and queen of Spain, the Spanish president and members of his cabinet, and dozens of well-connected but merely affluent visitors. Amid a collection of European antiques and oil paintings, you'll dine in any of two main rooms or three private ones, and perhaps precede your meal with a drink or tapas on the flower-filled patio. A garden in back has additional tables. Tantalizing menu items include spicy peppers stuffed with pulverized thigh of bull, Andalusian fish (urta) on a compote of aromatic tomatoes with coriander, cod filet with essence of red peppers, and Iberian beefsteak with foie gras and green peppers.

San Fernando
Outside of the luxury dining rooms of the hotels, this is the best restaurant in town. Dating from the 1700s, it is decorated with fabrics and wooden furnishings. Entered from a side street, the old-fashioned restaurant is on the second floor of an antique building, its windows opening onto the landmark square, Plaza de San Fernando, from which it takes its name. This is good local cooking, the type that's been served in the region for years. Classic soups include gazpacho and ajo blanco, a garlic soup flavored with almonds. Although it's an inland town, fresh fish reaches Carmona daily. Both cod and hake (merluza) appear perfectly grilled and spiced. Recently described as impeccable.

La Albahaca
This elegant restaurant is in the Barrio de Santa Cruz, Seville's most evocative quarter. Juan Talavera, a celebrated architect, constructed this 1920s Andalusian mansion, which has attracted royals such as the king and queen of Spain, and visiting celebrities like Charlton Heston. Lovely and graceful, it shuttles diners from a high-ceilinged central courtyard into one of several parlor-size dining rooms, each decorated in a smooth, nostalgic style that reflects the tastes and opulence of Spain's Victorian era. High-quality ingredients go into the first-rate cuisine. Intriguing appetizers include a fresh gooseliver-and-apple terrine in a pheasant jelly, and the baked sea bass with stir-fried plums, raisins, and almonds. Enduring main courses are roasted wild boar with fig marmalade, and a roasted pheasant breast with Iberian bacon. One of our favorites is veal sirloin with fresh gooseliver and a red-wine sauce. The bitter orange mousse off the dessert menu is one of the best finishes in town.

La Dehesa
One of Seville's leading restaurants, La Dehesa is known for its regional decor and for serving some of the finest cuisine in town. It is decorated like an elegant bodega (wine tavern) with stucco walls and windows with potted plants. Each corner is a shrine to a particular bullfighter, all of whom have donated memorabilia. Some of the city's best chefs show off their prowess with market-fresh, perfectly prepared fish and seafood. Meats, such as the tender, garlic-flavored lamb cutlets, are a particularly good choice: Herbs and spices are used judiciously to bring out natural flavor. Our preferred appetizer is the flavorful ensalada de La Dehesa (shrimp, avocado, and green leaf salad). Desserts are homemade and sumptuous, including freshly baked tarts or a delightful platter of crepes stuffed with nuts and banana ice cream.

Hostería del Laurel
This hidden treasure is tucked in one of the most charming buildings on tiny, difficult-to-find Plaza de los Venerables in Barrio de Santa Cruz. When the 19th-century playwright José Zorilla rewrote Tirso de Molina's original Don Juan, he used the Hostería de Luarel as one of the settings for his rewrite. It has iron-barred windows stuffed with plants. Inside, amid Andalusian tiles, beamed ceilings, and more plants, you'll enjoy good regional cooking. The hostería has some of the best and freshest tapas in town, our favorite being a zarzuelita de mariscos (shellfish cocktail) appetizer. The catch of the day is flown in, and fish can be either grilled or fried. The chefs also turn out one of the town's best seafood-studded paellas.

Enrique Becerra
Near the cathedral and Plaza Nueva, this popular tapas bar and eatery has a cozy, intimate setting that makes you feel instantly welcome. While perusing the menu, you can sip dry Tío Pepe and nibble herb-cured olives with lemon peel. The cookery pleases gourmets and gourmands, with such dishes as grilled cod in a green asparagus sauce or lamb meatballs flavored with mint. An especially good dessert that is occasionally featured is the yogurt mousse with mango and raspberry sauce. The ice-cold sangria is great for hot summer days. The wine list is one of Seville's best.

Mesón Don Raimundo
Near the cathedral and the landmark Virgen de los Reyes, this lunch restaurant is not only one of the best in the heavily trodden tourist district, but also one of the most convenient for sightseers. It is tucked away in an alleyway -- a bit hard to find -- off Calle Argote de Molina. Very cozy, with dark wooden furnishings, it evokes an old convent. The wine cellar is choice, and the welcome is warm. Dishes have a real taste of Andalusia, exemplified by the ribs of wild boar baked to perfection over firewood. Sherry from nearby Jerez de la Frontera flavors a sauce for the beef tenderloin. Some of the dishes display a Moorish influence, including the Mozarab-style wild duck braised in sherry. In fall look for the perfectly seasoned pheasant. Fish also appears; our favorite is the filet of sea bass with fresh prawns, lots of garlic and olive oil, and pine nuts.

Porta Coeli
With one of Seville's most sophisticated decors, Porta Coeli offers the finest hotel dining in the city. A charming and lovely restaurant with a modern style and a peaceful and warm character. According to the restaurant guides it's one of the better places to eat in town. The restaurant is situated in hotel Hesperia Sevilla. It has a nice terrace. Light colors help create that carefree atmosphere here. The stylish interior lets you dine in comfort. Quality typifies the excellent Mediterranean cuisine here. Dishes are changed out regularly, and without exception they're all very tasty. You'll be surprised by the chef's creative touch. And only the best ingredients are used. Very pleasant is the fact that the waiters are friendly and cordial. Staff members dress in a professional and neat style. For the most part couples and business people frequent this place.

Barbiana
Close to the Plaza Nueva in the heart of Seville, this is one of the city's best fish restaurants. Chefs endeavor to secure the freshest seafood, even though Seville is inland. In the classic Andalusian architectural tradition, a tapas bar is up front. In the rear is a cluster of rustically decorated dining rooms. If you visit for lunch, you can try the chef's specialty, seafood with rice (not available in the evening). We've sampled many items on the menu, none better than ortiguilla, a sea anemone quick-fried in oil, and the tortillitas de camarones, chickpea fritters with bits of chopped shrimp and fresh scallions. If you're going to order shellfish, the specialty here, order it a la plancha (fresh from the grill). Fresh fish is also available grilled with a zesty sauce, or deep-fried. We always keep an eye out for the sargo (rockfish), which is grilled and flavored with garlic juice and served with sweet roasted red peppers.

Corral del Agua
In an antique building with a central courtyard, this discovery is charmingly positioned in the old barrio of Santa Cruz. With its marble fountain and plants, it is a cozy, atmospheric choice. Once patronized by Don Juan himself (or so it's claimed), this building was originally a stable. Two recommend starters are the invigorating salad of lettuce hearts from Tudela with sautéed garlic and strips of ham, and the salmon pudding with mayonnaise. Among our favorite main courses is sea bass in a dry sherry sauce. Also terrific was a sirloin of veal cooked in the old Sevillana way (garlic, bay leaf, olive oil, vegetables, and lots of black pepper). Aficionados order cola de toro al estilo de Sevilla (bull's tail in the style of Seville).

Rio Grande
This classic Sevillian restaurant is named for the Guadalquivir River, which its panoramic windows overlook. It sits near the Plaza de Cuba, in front of the Torre del Oro, and some diners come here just for the view of the city monuments. Most dishes are priced at the lower end of the scale. A meal might include stuffed sweet pepper flamenca, fish-and-seafood soup seaman's style, salmon, chicken-and-shellfish paella, bull's tail Andalusian-style, or garlic chicken. A selection of fresh shellfish is brought in daily. Large terraces contain a snack bar, the Río Grande Pub, and a bingo room. You can often watch sports events such as soccer on the river in this pleasant (English-speaking) spot.

La Raza
In business for more than half a century, this longtime favorite is on the periphery of the Parque María Luisa. Shaded by palms or rubber trees, sidewalk tables are placed outside in fair weather. This modern restaurant also has a big bar with a patio. Natural flavors and robust spicing characterize the tasty main dishes. A local favorite is cola de toro (oxtail); tamer fare includes succulent prawns in garlic butter and flecks of freshly chopped parsley. Sirloin steak is made even more enticing with a flavorful whisky sauce. A cooling bowl of gazpacho is an ideal summer starter. The garden setting is romantic and you can stay and relax until well after midnight. The staff is friendly and attentive and the menu is mouth-watering. The tapas are sizable, so 2 or 3 tapas will be enough for two people. There is also indoor seating and a bar. La Raza is about one minute walking from Maria Luisa Park and a few minutes walk from Plaza de Espana. There are also lovely sculptures to gaze upon right in front of this historical restaurant and a large tree to sit under in the garden dining area.
